New job offer and currently processing STEM OPT case. What do I do?

Context: I'm on OPT and filing for STEM OPT (filed in May, biometrics appointment: June 2nd). I got an offer from another company and am considering leaving for that role (better opportunity to grow). USCIS is still processing the case. What would happen if I were to leave right now?
